Meatless Monday Recipe

I have an idea. I started participating in Meatless Monday about a month ago. Now, I don’t eat pork, haven’t since I was 13, and I no longer eat chicken for obviously reasons (Turbo would be pissed). I rarely eat red meat, however if I am at a nice restaurant where I know where they get their beef, I am known to order a steak or steak tartare. So that leaves fish and turkey. I love turkey bacon, sausage and burgers. Years ago I was a full fledge vegetarian but since having The Boy I have gone back and forth and back again.

Back to my idea, I am going to pick a vegetarian recipe, make it, photograph it and share it with you every Monday. This way, it will:

  1. Make me do it – don’t want to get angry comments from y’all!
  2. Make me plan ahead!
  3. Make me read all the digital magazines I get
  4. Eat better!

This coming Monday, I will be making Broccoli Tomato Galette from Vegetarian Times March 2013 edition. I plan to make it on Sunday, then refrigerate it and eat it on Monday. They say it will still taste Yummy the next day.

If any of you have any recipe ideas or where to get some good ones, let me know.

Sun! I see the Sun!

The sun finally came out this afternoon. I am so happy to see it! I spent the rest of the day working, getting cleaned up, cleaning the kitchen, starting  the laundry and dishes and vacuuming. Tonight is date night with My Man. We are going to Canoe. This place is on My Man and I’s Top 5 ATL restaurants. They always have wonderful food. They also have an outside bar next to the Chattahoochee River. They grow a lot of their own veggies on site and you can visit the gardens. But the BEST part is that they have CHICKENS!!!! I kid you not! I love to go look at them we visit. When we go in the winter, they are usually in bed (chickens automatically go to bed in their coop when the sun sets). However now that it is Spring and it stay lighter out longer, I am hoping to see them. I will try to take some pictures and post them.

The Boy has a date with Miss Gail. They are going to watch Adventures in Babysitting if he cleans up his room. I loved that movie when it came out. The Boy got it for Easter.

Last night Panny didn’t run away when she took her nightly whiff of my breath. Instead she made herself comfortable, did a little kneading and fell asleep…until I woke her up to go to the bathroom. I am so mean.

Last Night

The Boy had piano at 5:30 yesterday. By the time I took him I was longing for my bed. I hit a wall  about an hour before. Not sure why, I got to sleep in. Maybe “My What Would SK Do” workout was just too much for me. No, I am just getting old.

By the time we got home all I knew was that I was hungry and wanted to sleep. I had no idea what to eat, being tired makes my decision making skills wither away. I ended up eating two pieces of left over cheese pizza and apple with peanut butter. Not the best dinner but it was fast and I didn’t have to clean any pots or pans.

After one episode of the Big Bang Theory and Jeopardy, I headed upstairs to get my PJs on. By 8:10pm I was lying in bed, watching Dateline NBC and listening to My Man and The Boy play the guitar. Once in my bed I didn’t feel all that tired, so I finished reading The Other Daughter and have started Alone by Lisa Gardner. I thought about changing genre’s and reading The Prey. However in the end I knew if that in the back of my mind I would be thinking that I still had two more Lisa Gardner books to read.

Finally Panny jumped on top of me to smell my breath. This is what she does every night. Sometimes she takes a whiff thinks about it and jumps off the bed running from the room. Other times she looks at me and then makes her self comfortable…right on top of my face. It makes reading very hard. It makes watching TV very hard. It makes breathing very hard. Eventually she will climb off me, take her place on the bed and tell me to stop reading/watching TV and go to bed. And so I do.

Today I will be heading down to Newnan, GA. I have meetings with two of my favorite clients. The drive takes about 45 minutes. I will most likely get there early so there will be lots of random picture taking.

My plan is to bike an hour at home tonight. The temperature has drop 20 degrees and it is rainy out. The Girls are not going to be happy. Their dirt bath will get all muddy. If only they were into mud masks.

This morning it was my turn to take The Boy to camp. I decided that we should get a bagel from my favorite place Bruegger’s Bagels. I got the breakfast sandwich “skinny” on an olive oil and rosemary bagel. Yummy! The boy got a plain bagel with cream cheese. We then headed to camp. The boy is going to camp at our gym. We are members of LifeTime Athletics. Our location has been open for almost a year. I must say, I love our gym. First of all, it is really, really nice. They keep it clean, the employees are helpful, there is a cafe, a spa (The Boy gets his hair cut there), indoor and outdoor pools (with water slides!), squash courts, yoga studio and more. They have a wonder kids club and host Spring Break and Summer Camps. During the summer camps they take the kids on field trips to the Zoo, Braves Games, Six Flags and more. The loves going there.

I was scheduled to workout with my trainer Sara Kate at 8am. However she was unable to make it due to a death in the family. I told her not to worry, I would go in and do a “What Would SK Do?” workout. I first warmed up by walking on the treadmill for 10 minutes. Cool thing about their treadmills is that I can play solitaire while I walk! Next, I hit the machines. I worked on my arms, legs, and abs. I did each machine (total of 11) three times each, 15 reps. I think I did a pretty good job on my own. I got to listen to my “Rock” playlist that I had made for The Boy.

Whatcha Reading?

I read books on my iPad using iBooks, Kindle and Nook applications. I also listen to them via Audible books (http://www.audible.com) while I am at work. So I am usually “reading” two books at once.

Right now I have halfway thru reading Lisa Gardner’s “The Other Daughter” and just stared listening to her book “Say Goodbye”.

I had listen to a few of hers in the past but I got hooked on about a month ago and am now determined to read/listen to everyone she has written.
