Meatless Monday!

Good Meatless Monday Y’all!

I'm ready!

I’m ready!

As you remember, I chose to make Broccoli Tomato Galette from Vegetarian Times. I made it on Sunday and then re-heated it on Monday for dinner. It was pretty easy to make. On Sunday morning I went to Trader Joe’s and got everything I needed except the oregano, I grow it in my garden and used it. I decided that My Man would have a taste of it on Sunday and then compare how it tasted on Monday.

As you can see, I can’t rollout a circle to save my life. Anyway, I think my oddly shape pizza looks “rustic”.

Overall impression
The pizza (cause really, that it what it is) was pretty easy to make. I thought it tasted better fresh from the oven then it did re heated today. Both My Man and I think that it needed salt. I ended up adding salt to mine when I ate it both times and it helped a lot. The other thing was the crust. I don’t if it was the TJ crust (although I have had their regular crust and enjoyed it) or if it was the fact that it was a wheat crust but is was just ok. Ok as in I hope to never have it again.

I think I will make this again but with regular crust…and salt…and more cheese. I think I just added 300 more calories to the damn thing but it will Yummy! Y’all check it out and tell me what you think!

Here is the recipe:

Serves 4

This rustic pie takes up less space in the fridge or freezer than a typical pizza.
  • 4 plum tomatoes, halved and seeded
  • 3 cloves garlic, sliced
  • 1 Tbs. chopped fresh oregano
  • 4 cups broccoli florets
  • ½ small onion, sliced (½ cup)
  • 4 tsp. olive oil
  • 1 12-oz. pkg. prepared whole-wheat pizza dough, at room temperature
  • ¼ cup prepared pesto
  • ½ cup shredded fontina cheese

1. Preheat oven to 450°F. Line baking sheet with foil. Place tomato halves cut side up on baking sheet. Insert 2 slices of garlic in each tomato half; sprinkle with oregano. Roast 30 minutes.

2. Toss together broccoli, onion, and oil in baking dish. Roast 20 minutes, or until tender. Cool 10 minutes.

3. Roll dough into 10-inch circle. Transfer to baking sheet coated with cooking spray or lined with parchment paper. Spread pesto on crust; sprinkle with cheese. Top with vegetables, leaving 2-inch rim. Fold 1 inch of crust edge inward. Reduce oven temperature to 375°F; bake 40 minutes, or until golden.

STORE/SERVE Cool, wrap in foil, and refrigerate up to 2 days, or freeze 1 month. Reheat 15 minutes at 350°F before serving (thaw first if frozen).

Question: What did you have this Meatless Monday?

Today started off by getting My Man and The Boy off to work/camp. I then did my AM Yoga DVD. I did the forward bend practice. Of course, I was not alone. Panny and Simon did a few cat yoga moves with me and then went off to eat a little. I was really sore from yesterday’s bike ride. My hamstrings hurt when I did the forward bend. I couldn’t go down as far as usual but by the end I felt better.

I want to give a shout out to my girl Heidi for sending me the linky link that showed me how to make links on WordPress. I knew it would be right there in front of my face and I wasn’t wrong! Thanks again Heidi!!!

My bike ride went well yesterday but during the middle of the ride I saw smoke in the distance and a helicopter hovering. Something was defiantly on fire. I told my assistant about this morning and she read the an apartment complex had a fire and it affected a section of apartments. I hope everyone is ok. By the time I left, the smoke was getting heavier and I was happy I got there when I did. It would have sucked to have to ride in it.

It looks like I will be doing Meatless Tuesday today. I had a protein smoothie while I drove to work today. I then had same salad I had on Monday for lunch. I also had some grapes and an apple with peanut butter for snacks. I have really been on a peanut butter kick lately.  It is so yummy! I only eat the Trader Joes kind. Only peanuts and salt for me!

After work, I went and picked The Boy up from camp. Boys are weird. Yesterday I went to pick him up and he was like “What took you so long?” It was 4:30. Today I get there and he is unhappy because he said I came to early! It was 4:05. I can’t win!

When we got home he had to practice his piano. I must a admit, I totally forgot about it yesterday. He has his lesson tomorrow. He has one song memorized but not the second one. I am not to worried though since the second one is a new song and much longer then the first. After practice I did a little work on My Hotel Yorba and then is was time for dinner.

I made my self a veggie quesadilla using Trader Joe’s vegetable Marsala burger and cheese as the filling. I also had a side of black beans.

After dinner, I went out to hang out with the girls. For snack they got home-grown lettuce and broccoli. The broccoli heads are starting to go bad so I thought I would see if they would like them.

I sit outside with them while they eat and then scratch the ground, inside purple Dino and take dirt baths. Hawks are an issue. A little over a month ago a hawk killed our little chicken Sally. She was a Silkie and only weighed a pound or two, much smaller then the other two. I am still upset about it, so now I hang out with them while they free range. It is a good thing I do. When I went to put them up I saw a hawk fly away. It had been hiding in a tree about not to far away from the coop.

How did that get there?

Question: How often do you go meatless? Where do you get your recipes?

So since it was so nice out on Monday and the boy was out for Spring Break, My Man and I decided to go down to one of our favorite mexican places for dinner. This was a perfect place for me to go since it was Meatless Monday. They have a lot of veggie and fish options to choose from.

We started out with chips and guacamole. We thought this would be a “healthier” choice then the queso dip (which is  also very yummy). I ate to many chips. I was so hungry by the time we got there (stuck in ATL traffic) I just couldn’t stop eating them. Plus the guacamole is really good…and healthy!

For dinner I ordered the Abichuelas Sopes and the Poco Chihuahua Enchiladas. I had never had the enchilada before and it was very good. I will get it again. Two items to also check out is the Ceviche and Betabel Salad.

The vibe at Bone Garden is very funky. If you do not like skulls or tattoos, this place is not for you. If you want “real” mexican food, a fun vibe and great service, go check it out. Tell them My Hotel Yorba sent you!

PS.- They are not open on Sunday!
